Due to the global interest to healthy food and avoid food additives, analytical methods play an important role in this area. All organic and inorganic pollutants including Toxic heavy metals, pharmaceuticals, synthetic dyes, pesticides, have high risk to human and other living beings. Atomic absorption and emission techniques and also chromatographic techniques in combination with potent sample treatment techniques are used to separate and preconcentrate various pollutants from various matrixes. Analytical chemistry present dominant techniques to separate and determine trace/ultra trace pollutants in food samples. In this speech some analytical techniques are represented to explain the importance of food analysis via analytical techniques.
