The liquid-phase microextraction (LPME) method is one of the most efficient miniaturized sample pretreatment techniques in which small volumes of organic solvents as extraction phase are used to extract different analytes from various matrices (mostly food samples) prior to instrumental analysis. The development of LPME techniques is based on the simplicity, cheapness, and environmentally friendly extraction procedures. In this chapter the application of green solvents as green alternative of toxic organic solvents is discussed.
